Meatball Boats

Home made meatballs are a right of entry in an Italian family. I figured out how to make mine from my relative. Her formula is for all out meat sauce, so when I have a longing for work day meatballs, I pursue a faster route and make them in my simmering pot. This is anything but a fast feast, yet it’s simple, with few fixings and meatballs can make a few suppers assuming that you make extra, as I do.

Ingredients:

1 lb. ground beef

1 large egg

⅓ C breadcrumbs

¼ C Parmesan cheese

1 tbsp. Minced garlic

1 Tbsp fresh chopped parsley

Salt and pepper to taste

1 Tbsp olive oil

2 C marinara sauce

8 mini hoagie rolls

12 slices asiago cheese
